2 zucchini, sliced thin
4 ounces sliced mushrooms
1/2 large yellow onion
1/2 large red bell pepper3 Tbsp butter
1/2 cup heavy cream
1/2 cup sour cream
2 oz Pepper Jack Cheese
Garlic, sea salt, lemon pepper, basil to taste
12 oz Sam Mills Gluten-Free Non-GMO penne
Sautee the veggies in melted butter, seasoned with garlic, sea salt, lemon pepper, and basil. Once veggies are translucent, add heavy cream, sour cream, cheese over low heat until sauce thickens. Season sauce to taste.
Prepare pasta according to package. Serve sauce right away over pasta.
I like this pasta, but you do have to be vigilant cooking it. The window from not done to mush is about a minute, so you need to keep an eye on it for best flavor and texture.
