Apricot-Raisin Granola

2 1/2 cups oats
1/4 cup raisins
1/4 cup chopped apricots
1/4 cup local honey
6 Tbsp melted butter
2 tbsp vanilla
ginger, cinnamon, pumpkin pie spice to taste

Preheat oven to 250. Mix all items together, and spread in the bottom of a pan ( I used a round cake pan). Bake the granola for 1 1/2 hours, stirring every 20-30 minutes. Bakes up crispy and delicious. Will definitely do this one on a regular basis.
